Antioxidant Grape Caesar Salad

This is by far my favorite salad of the year. The Antioxidants Grape Caesar salad is filled with cancer fighting antioxidants, known as polyphenols. Polyphenols fights against free radicals in the body, and also may aid in preventing heart disease, diabetes, and Alzheimer’s disease. I love eating colorful fruits, especially fruits ranging on the red spectrum. The skin of these fruits contains majority of the antioxidants, and many of the best antioxidants are found in red fruits and seeds. So if you haven’t already, begin incorporating these fruit soldiers into your diet.
Salad Ingredients:
2 Cups Kale (pre-chopped and washed)
1/2 cup roasted brussels sprouts*
1/2 cup roasted mushrooms (seasoned to taste)*
3 grilled artichoke hearts
2 tablespoons fire roasted tomatoes
1 cup red grapes
*Brussels sprouts and mushrooms are roasted in the oven at 375 degrees, 10-15 minutes.
Homemade Caesar Dressing:
1/2 cup cashews (soaked in hot water, 5 minutes)
1/2 cup water
1/2 cup nutritional yeast
1 tbsp minced garlic
3 tbsp capers (add or reduce to taste)
2 tbsp olive oil (optional)
1/2 lemon squeezed
1 tbsp dijon mustard
Garlic powder (to taste)
1 pinch salt or 2 tsp (to taste)
2 tsp ground pepper (to taste)
