Black Beauty Berry Salad
I must admit, I was a bit skeptical making this salad. I’ve never eaten blackberries, and I wasn’t aware of the taste or texture. This would explain the shock factor I experienced after taking my first bite. The blackberry is has a meaty texture, it’s thick, seedy, and has a distinctive sweet taste that sets itself apart from other berries. Nutritionally, this berry is packed with half of the recommended daily dose of vitamin C, includes free radical fighting antioxidants, contains high amounts of manganese which helps manager blood sugar levels, and contains high amounts of fiber.
The blackberry salad dressing is an added bonus to any salad recipe; but, be aware of the seediness, as this may be a dealbreaker for some. Nevertheless, this salad, paired with this tasty dressing is a winning pair! I hope you enjoy!
Salad Ingredients:
2 Cups Kale (pre-chopped and washed)
1/2 - 1 cup blackberries
1 - 2 oz walnuts (raw, unroasted)
1/2 cup cremini mushrooms
1 oz red onions
1 serving protein of your choice
4 tablespoons of homemade blackberry dressing
Homemade Blackberry Dressing:
*The serving sizes below will last an entire week if using 3 for 4 tbsp per setting.
1 & 1/2 cup blackberries
4 tbsp while balsamic vinegar
4 tbsp soy sauce or 2 tbsp liquid aminos
4 tbsp olive oil
4 tbsp maple syrup or honey
2 tbsp dijon mustard
4 rounds ground salt or 2 tsp (to taste)
4 rounds ground paper
